Avocado  Vegetable Salad

I actually love this salad with breakfast but it makes a nice side dish with any meal! Add some tuna & it’s lunch!

Ingredients 

  • 1 Avocado cut into 1/2” pieces 
  • 1 small cucumber, chopped 
  • 1 stick of celery, chopped
  • 1 tbs finely diced red onion
  • 4-5 cherry tomatoes, quartered (or chop a larger tomato)
  • 1/2 c finely chopped greens such as kale, watercress or spinach 
  • 2 tbs. Shredded carrot
  • 1/3 c chopped red or green cabbage 
  • Juice from 1/2 lemon or lime
  • 1/2 tbs Olive oil 
  • 1 tbs chopped cilantro 
  • Fresh ground pepper to taste
  • 1 tsp Tajín or seasoning of your choice

Combine all ingredients and gently toss to blend. Serve the same day.
