I actually love this salad with breakfast but it makes a nice side dish with any meal! Add some tuna & it’s lunch!
Ingredients
- 1 Avocado cut into 1/2” pieces
- 1 small cucumber, chopped
- 1 stick of celery, chopped
- 1 tbs finely diced red onion
- 4-5 cherry tomatoes, quartered (or chop a larger tomato)
- 1/2 c finely chopped greens such as kale, watercress or spinach
- 2 tbs. Shredded carrot
- 1/3 c chopped red or green cabbage
- Juice from 1/2 lemon or lime
- 1/2 tbs Olive oil
- 1 tbs chopped cilantro
- Fresh ground pepper to taste
- 1 tsp Tajín or seasoning of your choice
Combine all ingredients and gently toss to blend. Serve the same day.
