Summer Salmon Burger with Avocado & Peach

Here’s an easy sandwich just perfect for a summer lunch on the patio or even as a brunch dish. There’s nothing like a perfectly ripe avocado and a peach when it’s in season!


  • 1 Salmon burger or fillet
  • 1-2 tsp. Olive oil 
  • 1 Bun or 2 slices of bread OR you can make a lettuce wrap 
  • 1/2 Small avocado, mashed 
  • 2-3 lettuce leaves
  • 1/2 Peach, sliced thin 
  • 2-3 Basil leaves, chiffonade 
  • Dash of Tajin
  • Mayonnaise, if desired 

Prepare the peaches, basil & lettuce. 

Cook the salmon burger with olive oil over medium-low heat for 3 minutes per side. Add a dash of Tajín & cook 1-2 minutes more.

Toast your bun or bread. Spread mashed avocado over one side or slice. Arrange the lettuce & peaches over the avocado. Sprinkle Tajin over the peaches.

If you like, add a light coat of mayonnaise on the other side. Top with the burger & basil.
